Ingredients
  

  • yellow squash, sliced
  • onion, finely chopped
  • eggs, beaten
  • mayonnaise
  • sour cream
  • sharp cheddar cheese, shredded
  • butter (plus more for greasing)
  • sleeve Ritz crackers (about 30), crushed
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  • In a large skillet, melt butter over medium heat. Sauté squash and onion until tender (about 10–12 minutes). Drain excess liquid.
  • In a large bowl, mix eggs, mayonnaise, sour cream, shredded cheddar, salt, and pepper.
  • Gently fold the squash mixture into the creamy filling.
  • Pour into prepared baking dish and spread evenly.
  • Sprinkle crushed crackers over the top.
  • Drizzle with melted butter.
  • Bake for 30–35 minutes until the top is golden and bubbly.
  • Let rest 5–10 minutes before serving.
