  • thick-cut beef chops (ribeye or sirloin)
  • fresh cranberries
  •  brown sugar
  • cloves garlic, minced
  • low-sodium soy sauce
  • pineapple juice
  • Salt and pepper to taste
  •  olive oil (for searing)
  • Fresh parsley (for garnish)

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a saucepan over medium heat, combine cranberries, brown sugar, garlic, soy sauce, and pineapple juice. Cook until cranberries burst and form a glaze.
  • Season beef chops with salt and pepper on both sides.
  • In an oven-safe skillet, heat olive oil over high heat and sear each chop for about 3 minutes per side until browned.
  • Pour the cranberry glaze over the seared chops.
  • Transfer the skillet to the oven and bake for about 20 minutes or until cooked to your liking.
