Ingredients
  

  • green or brown lentils
  •  sweet onions
  •  olive oil
  •  balsamic vinegar
  • fresh parsley or cilantro, chopped
  • Salt and pepper to taste

Instructions
 

  • Rinse the lentils under cold water until clear. In a pot, combine lentils with 3 cups of water, add salt, boil, then simmer for 20-25 minutes until tender.
  • Slice the onions thinly. Heat olive oil in a skillet over medium-low heat. Add onions and salt; cook slowly for 20-30 minutes until golden brown.
  • In a large bowl, mix cooked lentils with caramelized onions. Drizzle balsamic vinegar over the mixture.
  • Toss in chopped herbs and season with salt and pepper to taste.
  • Serve warm or refrigerate for an hour before serving.
