  •  portobello mushrooms
  • fresh cherry tomatoes, diced
  •  Italian seasoning
  •  garlic cloves, minced
  • grated Parmesan cheese
  •  plain breadcrumbs

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Clean the mushroom caps with a damp cloth and remove the stems; chop them finely.
  • In a mixing bowl, combine chopped mushroom stems, diced cherry tomatoes, minced garlic, Italian seasoning, breadcrumbs, and grated Parmesan cheese. Drizzle with olive oil and mix until well coated.
  • Generously stuff each mushroom cap with the filling mixture.
