Description

Make this Mediterranean Chicken Bake with juicy chicken, roasted veggies, olives, and cheese. A healthy, one-pan dinner ready in just 30 minutes!

Ingredients
  

  • chicken breast boneless and skinless
  • olive oil divided
  • garlic powder
  • dried oregano
  • zucchini thinly sliced
  • cherry tomatoes cut in half
  • yellow onion diced
  • Kalamata olives pitted
  •  jarred roasted red peppers thinly sliced
  • mozzarella grated
  •  feta crumbled
  •  fresh parsley for garnish
  • Kosher salt and fresh ground pepper to taste

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Slice the chicken breasts horizontally and season with olive oil, garlic powder, oregano, kosher salt, and pepper.
  • Transfer the chicken to a 9 x 13-inch baking dish. Top with zucchini, cherry tomatoes, onions, roasted red peppers, and Kalamata olives. Drizzle with remaining olive oil and season with salt and pepper.
  • Top with crumbled feta and grated mozzarella.
  • Bake for 20 minutes or until the chicken reaches an internal temperature of 165°F (74°C). Broil for 2-3 minutes to brown the cheese, if desired.
  • Rest for 5-10 minutes, garnish with fresh parsley, and serve.
