Ingredients
chicken breast boneless and skinless
olive oil divided
garlic powder
dried oregano
zucchini thinly sliced
cherry tomatoes cut in half
yellow onion diced
Kalamata olives pitted
jarred roasted red peppers thinly sliced
mozzarella grated
feta crumbled
fresh parsley for garnish
Kosher salt and fresh ground pepper to taste

Instructions
Preheat your oven to 400°F (200°C).
Slice the chicken breasts horizontally and season with olive oil, garlic powder, oregano, kosher salt, and pepper.
Transfer the chicken to a 9 x 13-inch baking dish. Top with zucchini, cherry tomatoes, onions, roasted red peppers, and Kalamata olives. Drizzle with remaining olive oil and season with salt and pepper.
Top with crumbled feta and grated mozzarella.
Bake for 20 minutes or until the chicken reaches an internal temperature of 165°F (74°C). Broil for 2-3 minutes to brown the cheese, if desired.
Rest for 5-10 minutes, garnish with fresh parsley, and serve.
