Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, whisk together eggs and sugar until pale and fluffy, about 5 minutes. Gently fold in sifted flour and baking powder until just combined.
Stir in vanilla extract. Divide batter into bowls and add gel food coloring to create desired pastel hues.
Spoon dollops of each colored batter onto the prepared baking sheet, swirling gently with a spatula.
