Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Wash and peel the carrots, then cut them into even pieces, about 2 inches long.
  • In a large bowl, whisk together olive oil, honey, salt, pepper, and thyme until well combined.
  • Add the sliced carrots to the bowl and toss them until evenly coated with the honey mixture.
  • Spread the coated carrots on a parchment-lined baking sheet in a single layer.
