Fresh, zesty, and easy to make! These grilled shrimp tacos with pineapple salsa are perfect for weeknight dinners or summer gatherings.

Ingredients
  

  •  fresh shrimp (peeled and deveined)
  •  corn or flour tortillas
  • fresh pineapple (diced)
  •  red onion (finely chopped)
  • cilantro (chopped)
  • Juice of 2 limes
  • olive oil
  • chili powder
  •  garlic powder
  • Salt and pepper to taste

Instructions
 

  • Marinate the shrimp in olive oil, chili powder, garlic powder, salt, and pepper for 15 minutes.
  • Preheat the grill to medium-high heat (400°F/200°C) and thread shrimp onto skewers if desired.
  • Grill shrimp for 2-3 minutes per side until pink and opaque.
  • While grilling, combine diced pineapple, red onion, cilantro, lime juice, and a pinch of salt in a bowl to make the salsa.
  • Warm tortillas on the grill or in a skillet for about one minute per side until pliable.
  • Assemble tacos by layering grilled shrimp on each tortilla and topping with pineapple salsa. Serve immediately with lime wedges.
