Fresh, zesty, and easy to make! These grilled shrimp tacos with pineapple salsa are perfect for weeknight dinners or summer gatherings.
Ingredients
fresh shrimp (peeled and deveined)
corn or flour tortillas
fresh pineapple (diced)
red onion (finely chopped)
cilantro (chopped)
Juice of 2 limes
olive oil
chili powder
garlic powder
Salt and pepper to taste

Instructions
Marinate the shrimp in olive oil, chili powder, garlic powder, salt, and pepper for 15 minutes.
Preheat the grill to medium-high heat (400°F/200°C) and thread shrimp onto skewers if desired.
Grill shrimp for 2-3 minutes per side until pink and opaque.
While grilling, combine diced pineapple, red onion, cilantro, lime juice, and a pinch of salt in a bowl to make the salsa.
Warm tortillas on the grill or in a skillet for about one minute per side until pliable.
Assemble tacos by layering grilled shrimp on each tortilla and topping with pineapple salsa. Serve immediately with lime wedges.
