Ingredients
  

  • boneless, skinless chicken breasts (about 1 lb)
  • cloves fresh garlic, minced
  •  mixed vegetables (carrots, peas, corn)
  •  low-sodium chicken broth
  • low-sodium soy sauce
  •  dried thyme
  • package (17.3 oz) puff pastry sheets

Instructions
 

  • Preheat the oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  • Season chicken breasts with salt and pepper. In a skillet over medium heat, add olive oil and cook the chicken until browned on both sides (approximately 6 minutes per side).
  • Add minced garlic and mixed vegetables to the skillet; stir for about 5 minutes until the veggies are slightly tender.
  • In a bowl, whisk together chicken broth, soy sauce, and thyme; pour over the chicken mixture in the skillet.
  • Roll out puff pastry sheets over the chicken mixture in the baking dish, sealing the edges well.
  • Bake for 25-30 minutes or until the crust is golden brown.
