Ingredients
  

  • graham cracker crumbs
  • unsalted butter, melted
  • cream cheese, softened
  • granulated sugar
  • fresh blackberries, chopped
  • lavender extract
  •  sour cream
  • eggs

Instructions
 

  • Preheat oven to 325°F (163°C).
  • Combine graham cracker crumbs and melted butter until moistened. Press into cupcake liners in a muffin tin.
  • Beat cream cheese until smooth; gradually add sugar, then mix in sour cream and lavender extract.
  • Add eggs one at a time, mixing on low until just combined.
  • Fold in chopped blackberries gently.
  • Fill crusts with cheesecake mixture and bake for 20-25 minutes until edges are set but center jiggles slightly.
  • Cool at room temperature before chilling in the fridge for at least two hours.
