Instructions
Preheat oven to 325°F (163°C).
Combine graham cracker crumbs and melted butter until moistened. Press into cupcake liners in a muffin tin.
Beat cream cheese until smooth; gradually add sugar, then mix in sour cream and lavender extract.
Add eggs one at a time, mixing on low until just combined.
Fold in chopped blackberries gently.
Fill crusts with cheesecake mixture and bake for 20-25 minutes until edges are set but center jiggles slightly.
Cool at room temperature before chilling in the fridge for at least two hours.
