Ingredients
  

  • chuck roast
  • carrots, chopped
  •  sweet onions, sliced
  • cloves garlic, minced
  • low-sodium beef broth
  • red wine
  • fresh thyme (or 1 tsp dried)
  •  leaves
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 300°F (150°C).
  • Season chuck roast generously with salt and pepper. In a Dutch oven, heat olive oil over medium-high heat and sear the roast on all sides until browned.
  • Remove the roast and sauté onions and garlic in the same pot until fragrant.
  • Return the roast to the pot, adding carrots, thyme, bay leaves, red wine, and enough beef broth to cover half of the meat.
  • Cover and cook in the oven for about 3 hours or until fork-tender.
  • Let rest for 10 minutes before slicing and serving with vegetables.
