low-sodium beef broth

Instructions
Preheat oven to 300°F (150°C).
Season chuck roast generously with salt and pepper. In a Dutch oven, heat olive oil over medium-high heat and sear the roast on all sides until browned.
Remove the roast and sauté onions and garlic in the same pot until fragrant.
Return the roast to the pot, adding carrots, thyme, bay leaves, red wine, and enough beef broth to cover half of the meat.
Cover and cook in the oven for about 3 hours or until fork-tender.
