green cabbage, cut into wedges
carrots, sliced

Instructions
Rinse the corned beef under cold water to remove excess salt. Chop the cabbage into wedges, slice the carrots, halve the potatoes, and quarter the onions.
In a large pot or Dutch oven, place the rinsed corned beef and cover it with water (about four inches above the meat). Bring to a boil over medium-high heat.
Reduce heat to low, cover, and let simmer for 2-3 hours until tender; skim off any foam that forms on top.
After two hours, add potatoes and carrots; cook until fork-tender (about one hour).
Add cabbage wedges about 15 minutes before serving; cook until just tender.
Slice the corned beef against the grain and serve alongside vegetables on a large platter.
