Ingredients
  

  • pounds corned beef brisket
  • green cabbage, cut into wedges
  • carrots, sliced
  • Yukon Gold potatoes, halved
  •  yellow onions, quartered
  • Water (for boiling)

Instructions
 

  • Rinse the corned beef under cold water to remove excess salt. Chop the cabbage into wedges, slice the carrots, halve the potatoes, and quarter the onions.
  • In a large pot or Dutch oven, place the rinsed corned beef and cover it with water (about four inches above the meat). Bring to a boil over medium-high heat.
  • Reduce heat to low, cover, and let simmer for 2-3 hours until tender; skim off any foam that forms on top.
  • After two hours, add potatoes and carrots; cook until fork-tender (about one hour).
  • Add cabbage wedges about 15 minutes before serving; cook until just tender.
  • Slice the corned beef against the grain and serve alongside vegetables on a large platter.
