Instructions
Rinse and soak navy beans in cold water overnight.
In a large pot over medium heat, cook diced bacon until crispy. Remove and set aside while keeping the bacon fat.
Sauté chopped onions, carrots, and celery in the bacon fat until softened. Add minced garlic and sauté for one more minute.
Return crispy bacon to the pot with drained beans and bay leaves. Pour in chicken broth until everything is covered by about an inch of liquid.
Bring to a boil, then reduce heat to low and simmer uncovered for about one hour or until beans are tender.
