Ingredients
  

  • long-grain white rice
  •  low-sodium vegetable broth
  • olive oil
  •  onion, finely chopped
  • cloves garlic, minced
  • ground cumin
  • paprika
  •  fresh basil or cilantro, chopped

Instructions
 

  • Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add onions and garlic; cook until translucent (about 3 minutes).
  • Toast the Rice: Stir in the rice and toast for 2 minutes until slightly golden.
  • Add Liquid: Pour in the vegetable broth and add cumin and paprika. Bring to a boil, then reduce heat to low.
  • Simmer: Cover and simmer for about 15 minutes until rice is tender and has absorbed the liquid.
  • Fluff with Fresh Herbs: Let sit for 5 minutes off heat, then fluff with a fork and stir in fresh herbs
  • Serve: Transfer to a serving bowl, drizzle with olive oil if desired, and enjoy!
