Quick and easy Sheet Pan Sausage and Veggies recipe packed with color and flavor. Perfect for busy weeknights, meal prep, and minimal cleanup!

Ingredients
  

  •  sausage links (Italian, chicken, or plant-based)
  • bell peppers (mixed colors, chopped)
  •  zucchini (sliced)
  •  red onion (wedges)
  •  extra virgin olive oil
  • garlic powder
  • Italian seasoning
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Slice sausage into bite-sized pieces and chop vegetables into uniform chunks.
  • In a large bowl, toss sausages and veggies with olive oil, garlic powder, Italian seasoning, salt, and pepper until evenly coated.
  • Spread the mixture on a large baking sheet in a single layer.
  • Roast in the oven for 25-30 minutes, tossing halfway through until sausage is browned and veggies are tender.
  • Serve warm directly from the pan or transfer to plates. Optional: Drizzle with balsamic glaze or lemon juice.
