Ingredients
slices bacon, chopped
medium onion, diced
cloves garlic, minced
Cajun seasoning (adjust to taste)
medium Yukon Gold potatoes, peeled and diced
chicken broth (or vegetable broth)
Salt and black pepper, to taste
heavy cream or coconut milk (optional, for creamier soup)
shredded cheddar cheese, for topping
Chopped chives or green onions, for garnish

Instructions
In a large pot, cook chopped bacon over medium heat until crisp. Remove with a slotted spoon and set aside. Leave 1-2 tablespoons of bacon fat in the pot.
Add diced onion to the pot and sauté until soft, about 5-7 minutes.
Stir in minced garlic and cook for another 30 seconds until fragrant.
Add Cajun seasoning and toast the spices for 1 minute.
Add diced potatoes and pour in chicken broth. Stir to combine.
Bring to a boil, then reduce heat and simmer uncovered for 20-25 minutes, or until potatoes are tender.
For a thicker soup, mash some of the potatoes in the pot.
Stir in heavy cream or coconut milk if using. Season with salt and pepper to taste.
Ladle into bowls and top with crispy bacon, shredded cheddar, and chives. Serve hot and enjoy!
