Cozy up with this bold and creamy Cajun Potato Soup. Packed with flavor, easy to customize, and perfect for weeknight meals or make-ahead comfort food.

Ingredients
  

  • slices bacon, chopped
  • medium onion, diced
  • cloves garlic, minced
  • Cajun seasoning (adjust to taste)
  • medium Yukon Gold potatoes, peeled and diced
  • chicken broth (or vegetable broth)
  • Salt and black pepper, to taste
  • heavy cream or coconut milk (optional, for creamier soup)
  • shredded cheddar cheese, for topping
  • Chopped chives or green onions, for garnish

Instructions
 

  • In a large pot, cook chopped bacon over medium heat until crisp. Remove with a slotted spoon and set aside. Leave 1-2 tablespoons of bacon fat in the pot.
  • Add diced onion to the pot and sauté until soft, about 5-7 minutes.
  • Stir in minced garlic and cook for another 30 seconds until fragrant.
  • Add Cajun seasoning and toast the spices for 1 minute.
  • Add diced potatoes and pour in chicken broth. Stir to combine.
  • Bring to a boil, then reduce heat and simmer uncovered for 20-25 minutes, or until potatoes are tender.
  • For a thicker soup, mash some of the potatoes in the pot.
  • Stir in heavy cream or coconut milk if using. Season with salt and pepper to taste.
  • Ladle into bowls and top with crispy bacon, shredded cheddar, and chives. Serve hot and enjoy!
