butter
all-purpose flour
whole milk
sharp cheddar cheese, grated (plus extra for topping)

Instructions
Preheat your oven to 400°F (200°C).
Bring a large pot of salted water to a boil. Add cauliflower florets and blanch for about 5 minutes until just tender. Drain and let steam-dry.
In a medium saucepan, melt the butter over medium heat. Stir in flour and cook for 2 minutes to make a roux.
Gradually whisk in the milk. Cook, whisking constantly, until thickened and smooth (about 5–7 minutes).
Remove sauce from heat and stir in cheddar cheese, Parmesan (if using), mustard, salt, pepper, and nutmeg.
Place the cauliflower in a baking dish. Pour cheese sauce over, making sure all pieces are coated. Top with extra cheese.
Bake in the preheated oven for 20–25 minutes, until bubbly and golden on top. For a crispier top, broil for an additional 2–3 minutes.
Serve hot, optionally garnished with a sprinkle of fresh herbs or additional Parmesan.
