Ingredients
  

  • head of cauliflower, cut into florets
  • butter
  • all-purpose flour
  • whole milk
  • sharp cheddar cheese, grated (plus extra for topping)
  • Parmesan cheese, grated (optional)
  • Dijon mustard
  • Salt and pepper to taste
  • Pinch of nutmeg (optional)

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • Bring a large pot of salted water to a boil. Add cauliflower florets and blanch for about 5 minutes until just tender. Drain and let steam-dry.
  • In a medium saucepan, melt the butter over medium heat. Stir in flour and cook for 2 minutes to make a roux.
  • Gradually whisk in the milk. Cook, whisking constantly, until thickened and smooth (about 5–7 minutes).
  • Remove sauce from heat and stir in cheddar cheese, Parmesan (if using), mustard, salt, pepper, and nutmeg.
  • Place the cauliflower in a baking dish. Pour cheese sauce over, making sure all pieces are coated. Top with extra cheese.
  • Bake in the preheated oven for 20–25 minutes, until bubbly and golden on top. For a crispier top, broil for an additional 2–3 minutes.
  • Serve hot, optionally garnished with a sprinkle of fresh herbs or additional Parmesan.
