Ingredients
boneless, skinless chicken breasts
fresh carrots
celery stalks
medium onion
low-sodium chicken broth
all-purpose flour
baking powder
cup whole milk

Instructions
Chop the chicken, carrots, celery, and onion into bite-sized pieces.
In a large pot over medium heat, sauté the onion in olive oil until translucent. Add chopped carrots and celery; cook for about five minutes.
Stir in diced chicken and chicken broth; bring to a boil.
In a separate bowl, mix flour, baking powder, milk, salt, and pepper until just combined.
Drop spoonfuls of the dumpling mixture into the simmering soup. Cover and steam on low heat for about 15 minutes.
Serve warm, garnished with fresh herbs if desired.
