Ingredients
All-Purpose Flour
Unsalted Butter
Granulated Sugar
Eggs
Lemon Curd or Berry Filling

Instructions
Preheat oven to 375°F (190°C). In a bowl, mix flour and sugar, then cut in cold butter until crumbly.
Add one egg and mix until combined; chill dough for an hour.
Roll out the dough and cut circles to fit muffin tins; press into greased cups.
Fill each shell with your choice of lemon curd or berries up to three-quarters full.
Bake for 20-25 minutes until golden brown. Cool before decorating.
