Ingredients
  

  • All-Purpose Flour
  • Unsalted Butter
  • Granulated Sugar
  • Eggs
  • Lemon Curd or Berry Filling

Instructions
 

  • Preheat oven to 375°F (190°C). In a bowl, mix flour and sugar, then cut in cold butter until crumbly.
  • Add one egg and mix until combined; chill dough for an hour.
  • Roll out the dough and cut circles to fit muffin tins; press into greased cups.
  • Fill each shell with your choice of lemon curd or berries up to three-quarters full.
  • Bake for 20-25 minutes until golden brown. Cool before decorating.
