Instructions
 

  • Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it or lining it with parchment paper.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  • In another bowl, beat the softened cream cheese and eggs until smooth. Stir in the vanilla extract.
  • Gradually fold the wet mixture into the dry ingredients until just combined; do not overmix.
  • Gently fold in the cranberries until evenly distributed throughout the batter.
  • Pour the batter into the prepared loaf pan and bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
