Instructions
Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it or lining it with parchment paper.
In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
In another bowl, beat the softened cream cheese and eggs until smooth. Stir in the vanilla extract.
Gradually fold the wet mixture into the dry ingredients until just combined; do not overmix.
Gently fold in the cranberries until evenly distributed throughout the batter.
Pour the batter into the prepared loaf pan and bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
