Instructions
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Thaw puff pastry sheets according to package instructions and roll out slightly on a floured surface. Cut into squares.
In a bowl, mix softened cream cheese, sugar, vanilla extract, and egg yolk until smooth.
Place a tablespoon of filling in the center of each square. Fold corners to the center and pinch to seal.
Arrange on the baking sheet and bake for 20-25 minutes until golden brown.
