  • medium sweet potatoes (about 1 lb), peeled and diced
  • olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions
 

  • Preheat oven to 400°F (200°C).
  • In a bowl, toss diced sweet potatoes with olive oil, salt, and pepper until evenly coated.
  • Spread sweet potatoes on a baking sheet in a single layer and roast for 25-30 minutes until tender and golden brown.
  • Season chicken breasts with salt and pepper. Grill or pan-sear over medium heat for 6-7 minutes per side until cooked through.
  • Brush BBQ sauce over chicken during the last minute of cooking to caramelize.
  • Assemble bowls by layering roasted sweet potatoes at the bottom, topping with sliced BBQ chicken, and garnishing with fresh cilantro if desired.
