Ingredients
chuck roast or sirloin, cut into bite-sized pieces
medium Yukon Gold or russet potatoes, thinly sliced
sharp cheddar cheese, shredded
onion, diced
garlic, minced
low-sodium beef broth
paprika
dried thyme
Salt and pepper to taste

Instructions
Sauté diced onion in a skillet over medium heat until translucent; add minced garlic.
Stir in chopped steak and seasonings (paprika, thyme, salt, and pepper) until lightly browned.
Layer half of the sliced potatoes in a slow cooker, followed by half of the beef mixture and a sprinkle of cheddar cheese.
Repeat layers with remaining potatoes, beef mixture, and top with more cheese.
Pour beef broth over all layers.
Cook on low for 6-8 hours or high for 4-5 hours until potatoes are tender.
