Cozy up with this Steak and Cheddar Potato Casserole — a hearty, cheesy slow cooker meal perfect for weeknights, leftovers, and comfort food cravings.

Ingredients
  

  • chuck roast or sirloin, cut into bite-sized pieces
  • medium Yukon Gold or russet potatoes, thinly sliced
  •  sharp cheddar cheese, shredded
  • onion, diced
  •  garlic, minced
  •  low-sodium beef broth
  •  paprika
  • dried thyme
  • Salt and pepper to taste

Instructions
 

  • Sauté diced onion in a skillet over medium heat until translucent; add minced garlic.
  • Stir in chopped steak and seasonings (paprika, thyme, salt, and pepper) until lightly browned.
  • Layer half of the sliced potatoes in a slow cooker, followed by half of the beef mixture and a sprinkle of cheddar cheese.
  • Repeat layers with remaining potatoes, beef mixture, and top with more cheese.
  • Pour beef broth over all layers.
  • Cook on low for 6-8 hours or high for 4-5 hours until potatoes are tender.
