Instructions
Cook pasta shells in boiling salted water until al dente (about 8-10 minutes). Drain and set aside.
In a skillet over medium heat, sauté minced garlic and sliced mushrooms in olive oil until golden brown (about 5 minutes).
Add spinach to the skillet and cook until wilted. Mix in cream cheese until well combined.
Stir in Parmesan cheese, thyme, and black pepper for flavor.
Preheat the oven to 375°F (190°C). Stuff each pasta shell with the mushroom mixture and place them in a baking dish.
Pour marinara sauce over the stuffed shells, cover with foil, and bake for 20 minutes. Remove foil to brown for an additional 5 minutes.
