  •  beef chuck roast, cubed
  •  potato gnocchi
  •  carrots, chopped
  • stalks celery, chopped
  •  yellow onion, diced
  • garlic, minced
  • low-sodium beef broth
  •  olive oil
  • fresh thyme leaves
  • bay leaves

Instructions
 

  • Heat olive oil in a large pot over medium-high heat. Sear beef until browned on all sides (5-7 minutes), then remove and set aside.
