Ingredients
  

  • beef
  • onion diced
  • garlic minced
  •  crushed tomatoes
  • chicken or beef broth
  • tomato sauce
  •  Italian seasoning
  • paprika
  •  salt adjust to taste
  • black pepper
  •  heavy cream or half-and-half
  •  package refrigerated cheese tortellini
  •  Parmesan or mozzarella cheese optional, for garnish
  •  fresh parsley or basil chopped (optional, for garnish)

Instructions
 

  • Brown the Ground Beef:In a skillet over medium heat, cook the ground beef until browned and cooked through, breaking it into small pieces. Drain any excess fat.Add the diced onion and garlic to the skillet and sauté for 2-3 minutes until fragrant.
  • Assemble the Soup:Transfer the cooked beef, onion, and garlic to the slow cooker. Add the crushed tomatoes, broth, tomato sauce, Italian seasoning, paprika, salt, and black pepper. Stir to combine.
  • Cook:Cover and cook on low for 4-6 hours or high for 2-3 hours.
  • Add the Tortellini and Cream:In the last 30 minutes of cooking, stir in the tortellini and heavy cream. Cook until the tortellini is tender and cooked through.
  • Serve:Ladle the soup into bowls and top with shredded cheese and fresh herbs, if desired.
