  •  granulated sugar
  •  eggs
  • buttermilk or 1 cup milk + 1 tbsp vinegar, let sit for 5 min

Instructions
 

  • Preheat And PrepPreheat oven to 375°F (190°C).Line a 12-cup muffin tin with liners or grease well.
  • Make the BatterIn a large bowl, whisk together flour, baking powder, baking soda, and salt.In a separate bowl, whisk together melted butter, sugar, eggs, buttermilk, and vanilla until smooth.Gradually mix the wet ingredients into the dry ingredients until just combined (don’t overmix).
  • Prepare the SwirlIn a small bowl, mix brown sugar, cinnamon, and melted butter.
  • Layer And SwirlFill each muffin cup halfway with batter.Spoon about ½ teaspoon of the cinnamon-sugar mixture onto each, then add more batter to cover.Use a toothpick or knife to gently swirl the cinnamon mixture into the batter.
  • BakeBake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.Let muffins cool in the pan for 5 minutes, then transfer to a wire rack.
