Ingredients
  

  • boneless skinless chicken breasts (or thighs)
  •  olive oil
  •  lime juice freshly squeezed
  •  lime zest
  • chopped cilantro
  •  garlic minced
  • honey
  • chili powder
  • cumin
  • salt
  •  black pepper
  •  ripe mango diced
  • avocado diced
  • bell pepper finely chopped
  •  onion finely chopped
  •  jalapeño finely diced (optional)
  •  lime juice
  •  cilantro chopped
  • salt
  • mixed greens romaine, arugula, or spinach
  • cherry tomatoes halved
  • cotija cheese or feta cheese optional
  • tortilla chips for crunch, optional
  • olive oil

Instructions
 

  • Step 1: Marinate the ChickenIn a bowl, mix olive oil, lime juice, lime zest, cilantro, garlic, honey, chili powder, cumin, salt, and pepper.Add chicken, coat well, and marinate for at least 15 minutes (or up to 2 hours for deeper flavor).
  • Step 2: Make the Mango Avocado SalsaIn a bowl, combine mango, avocado, red bell pepper, red onion, jalapeño, lime juice, cilantro, and salt.Toss gently and set aside.
  • Step 3: Grill the ChickenHeat a grill or skillet over medium-high heat.Cook chicken for 5-7 minutes per side, or until internal temperature reaches 165°F (75°C).Let rest for 5 minutes, then slice.
  • Step 4: Make the DressingWhisk together olive oil,  lime juice, honey, Dijon mustard, garlic, cilantro, salt, and pepper.
  • Step 5: Assemble the SaladIn a large bowl, layer mixed greens, cherry tomatoes, and grilled chicken.Top with mango avocado salsa, cheese (if using), and tortilla chips.Drizzle with cilantro lime dressing and serve immediately!
