Ingredients
  

  •  sirloin steak cut into 1-inch cubes (or ribeye, strip steak)
  •  olive oil
  • paprika
  • salt
  • black pepper
  •  baby potatoes halved
  • olive oil

  •  unsalted butter
  • garlic minced
  • pepper flakes optional
  • fresh parsley chopped

Instructions
 

  • Cook the Potatoes:Heat 1 tbsp olive oil in a large skillet over medium-high heat.Add baby potatoes, season with salt, pepper, and garlic powder, and cook for 10-12 minutes, stirring occasionally, until golden brown and fork-tender.Remove from the pan and set aside.
  • Sear the Steak Bites:In the same pan, add 1 tbsp olive oil over high heat.Add steak cubes, season with paprika, salt, and pepper, and sear for 2-3 minutes per side until browned. (Do this in batches if needed to avoid overcrowding.)Remove steak from the pan and set aside.
  • Make the Garlic Butter Sauce:Reduce heat to medium-low. Add butter, garlic, and red pepper flakes, stirring for 30 seconds until fragrant.Return potatoes and steak to the pan, tossing to coat in garlic butter.Stir in fresh parsley and a squeeze of lemon juice (if using).
