Dump-and-Bake Forgotten Chicken is an easy one-pan recipe with juicy chicken, creamy soup, and rice—perfect for busy weeknight dinners.

Ingredients
  

  • boneless skinless chicken breasts (or thighs)
  •  long-grain white rice uncooked
  •  cream of chicken soup
  • cream of mushroom soup (or use all chicken soup)
  • chicken broth
  • onion soup mix
  • garlic powder
  • paprika
  • Salt and pepper to taste
  • butter optional, for extra richness

Instructions
 

  • Preheat the Oven:Set your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  • Prepare the Rice Mixture:In the baking dish, mix together the uncooked rice, cream of  chicken soup, cream of mushroom soup, and chicken broth. Stir well to combine.
  • Add the Chicken:Place the chicken breasts on top of the rice mixture.Sprinkle the onion soup mix, garlic powder, paprika, salt, and pepper over the chicken.
  • Bake:Cover the dish tightly with aluminum foil to trap moisture.Bake for 1 hour and 30 minutes, or until the rice is tender and the chicken is fully cooked (internal temperature should reach 165°F/75°C).
  • Serve:Remove from the oven and let it sit for a few minutes before serving.Optionally, fluff the rice with a fork and top with a pat of butter for extra richness.
