Description

Southwestern Chicken Casserole is a hearty one-dish meal packed with tender chicken, black beans, corn, bell peppers, rice, and plenty of melty cheese. It’s the perfect quick and satisfying dinner that comes together easily—and leaves you with minimal cleanup.

Ingredients
  

  •  cooked shredded chicken rotisserie or leftover chicken works great!
  • uncooked rice white or brown
  • chicken broth
  •  black beans, drained and rinsed
  •  corn, drained
  • Rotel tomatoes with green chilies, undrained
  • pepper diced (red or green)
  • cream or Greek yogurt
  • chili powder
  •  cumin
  • garlic powder
  • smoked paprika
  • salt
  • black pepper
  • cheese cheddar, Monterey Jack, or a Mexican blend
  • tortilla chips optional, for a crunchy topping
  • chopped fresh cilantro for garnish

Instructions
 

  • Preheat And Prep:Preheat oven to 375°F (190°C).Lightly grease a 9×13-inch baking dish.
  • Assemble the Casserole:In a large mixing bowl, combine shredded chicken, uncooked rice, black beans, corn, Rotel tomatoes, bell pepper, sour cream, and all the seasonings.Stir in the chicken broth until well mixed.Transfer the mixture to the prepared baking dish, spreading it evenly.
  • Bake the Casserole:Cover with foil and bake for 30 minutes, or until the rice is fully cooked.Remove from the oven, sprinkle cheese and crushed tortilla chips on top.Return to the oven, uncovered, for 5-10 minutes, until the cheese is melted and bubbly.
  • Serve And Enjoy:Garnish with chopped cilantro and serve hot!Pair with avocado, salsa, or extra sour cream for extra flavor.
