Ingredients
cooked shredded chicken rotisserie or leftover chicken works great!
uncooked rice white or brown
chicken broth
black beans, drained and rinsed
corn, drained
Rotel tomatoes with green chilies, undrained
pepper diced (red or green)
cream or Greek yogurt
chili powder
cumin
garlic powder
smoked paprika
salt
black pepper
cheese cheddar, Monterey Jack, or a Mexican blend
tortilla chips optional, for a crunchy topping
chopped fresh cilantro for garnish

Instructions
Preheat And Prep:Preheat oven to 375°F (190°C).Lightly grease a 9×13-inch baking dish.
Assemble the Casserole:In a large mixing bowl, combine shredded chicken, uncooked rice, black beans, corn, Rotel tomatoes, bell pepper, sour cream, and all the seasonings.Stir in the chicken broth until well mixed.Transfer the mixture to the prepared baking dish, spreading it evenly.
Bake the Casserole:Cover with foil and bake for 30 minutes, or until the rice is fully cooked.Remove from the oven, sprinkle cheese and crushed tortilla chips on top.Return to the oven, uncovered, for 5-10 minutes, until the cheese is melted and bubbly.
