Ingredients
  

  • olive oil
  • onion diced
  • carrots diced
  •  stalks diced
  • garlic minced
  • dried thyme
  • dried oregano
  • black pepper
  • salt adjust to taste
  •  pearl barley rinsed
  • chicken broth
  • cooked chicken shredded (rotisserie works great!)
  •  leaf
  • lemon juice optional, for brightness
  • fresh parsley chopped

Instructions
 

  • Step 1: Sauté the AromaticsIn a large pot or Dutch oven, heat olive oil over medium heat.Add onion, carrots, and celery, and sauté for 4-5 minutes until softened.Stir in garlic, thyme, oregano, salt, and black pepper. Cook for 30 seconds until fragrant.
  • Step 2: Cook the SoupAdd barley, chicken broth, and bay leaf. Bring to a boil.Reduce heat, cover, and let simmer for 35 minutes, stirring occasionally.
  • Step 3: Add the Chicken And FinishStir in shredded chicken and let simmer for another 5-10 minutes.Remove bay leaf, stir in lemon juice and parsley. Adjust seasoning if needed.
  • Step 4: Serve And Enjoy!Ladle into bowls and serve hot with crusty bread or a side salad.
