Instructions
Step 1: Sauté the AromaticsIn a large pot or Dutch oven, heat olive oil over medium heat.Add onion, carrots, and celery, and sauté for 4-5 minutes until softened.Stir in garlic, thyme, oregano, salt, and black pepper. Cook for 30 seconds until fragrant.
Step 2: Cook the SoupAdd barley, chicken broth, and bay leaf. Bring to a boil.Reduce heat, cover, and let simmer for 35 minutes, stirring occasionally.
