Description

This rich and comforting chicken gnocchi is a one-pan meal featuring tender chicken, pillowy gnocchi, and a creamy spinach sauce. Ready in just 30 minutes, it’s the perfect cozy dinner for busy weeknights!

Ingredients
  

  • olive oil
  • skinless chicken breasts, cut into bite-sized pieces
  •  garlic minced
  • Italian seasoning
  • red pepper flakes optional, for heat
  • Salt and black pepper to taste
  • chicken broth
  • heavy cream or half and half for a lighter option
  • Parmesan cheese grated
  • potato gnocchi (store-bought or homemade)
  • fresh spinach chopped
  • sun-dried tomatoes chopped (optional)
  • butter

Instructions
 

  • Step 1: Cook the ChickenHeat olive oil in a large skillet over medium heat.Add chicken pieces, season with Italian seasoning, red pepper flakes, salt, and pepper.Cook for 5-6 minutes until golden brown and cooked through.Remove the chicken from the pan and set aside.
  • Step 2: Build the Creamy SauceIn the same skillet, add garlic and sauté for 30 seconds until fragrant.Pour in chicken broth and heavy cream, stirring to combine.Bring to a gentle simmer and add Parmesan cheese, stirring until melted.
  • Step 3: Cook the GnocchiAdd gnocchi directly to the skillet (no need to pre-boil).Stir and let it simmer for 4-5 minutes until gnocchi becomes soft and the sauce thickens.
  • Step 4: Finish the DishStir in spinach, sun-dried tomatoes (if using), and butter.Return the chicken to the skillet and mix everything together.Simmer for another 2 minutes, then remove from heat.
