Ingredients
  

  • flour tortillas
  • breakfast sausage crumbled
  •  eggs
  • milk
  • cheddar cheese
  • Monterey Jack cheese
  •  diced green bell pepper optional
  • chopped green onions optional
  • breakfast sausage
  • all-purpose flour
  • whole milk
  •  garlic powder
  •  onion powder
  •  black pepper

Instructions
 

  • Step 1: Cook the SausageIn a large skillet, cook the 1 lb sausage over medium heat until browned and crumbled (about 5-7 minutes). Remove half of the cooked sausage for the gravy, leaving the rest in the skillet for the enchiladas.
  • Step 2: Scramble the EggsIn a bowl, whisk together the eggs and milk. Pour the mixture into the skillet with the sausage (you can use the same skillet if needed).Scramble the eggs with the sausage until fully cooked (about 3-4 minutes). Set aside.
  • Step 3: Prepare the Sausage GravyIn the same skillet (wipe out excess grease if needed), cook the remaining 1 lb sausage until browned.Stir in flour and cook for 1-2 minutes to form a roux.Gradually add milk, stirring constantly to avoid lumps.Add garlic powder, onion powder, black pepper, and salt to taste.Simmer for 5-7 minutes until thickened to your desired consistency.
  • Step 4: Assemble the EnchiladasPreheat the oven to 375°F (190°C).Lay out the flour tortillas on a clean surface.Divide the scrambled eggs with sausage evenly among the tortillas.Add a sprinkle of cheddar cheese and Monterey Jack cheese.Roll each tortilla tightly and place them in a greased 9×13-inch baking dish.
  • Step 5: Add Gravy and BakePour the sausage gravy evenly over the enchiladas.Sprinkle with a little extra shredded cheese on top.Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
