Ingredients
  

  • slices thick-cut turkey bacon, chopped (or regular bacon, if preferred)
  • head green cabbage, cored and thinly sliced (about 8 cups)
  • onion, thinly sliced
  •  garlic, minced
  • smoked paprika (optional, for extra depth)
  • Salt and pepper, to taste
  • apple cider vinegar (or white vinegar, for brightness)

Instructions
 

  • In a large skillet or Dutch oven over medium heat, cook the chopped turkey bacon until crispy, about 6–8 minutes. Use a slotted spoon to transfer the turkey bacon to a paper towel-lined plate, leaving the drippings in the pan.
  •  Add the sliced onions to the turkey bacon drippings in the skillet. Cook over medium heat, stirring occasionally, for 8–10 minutes, or until the onions are golden brown and caramelized. Stir in the minced garlic and cook for an additional 1–2 minutes, until fragrant. Be cautious not to burn the garlic.
  • Add the sliced cabbage to the skillet, stirring to coat it in the turkey bacon drippings and onion mixture. Season with smoked paprika, salt, and pepper. Cook, stirring occasionally, for 10–12 minutes, or until the cabbage is tender but still slightly crisp.
  • Drizzle the apple cider vinegar over the cabbage and stir to combine. The vinegar’s acidity helps balance the richness of the turkey bacon and the sweetness of the onions.
  • Return the cooked turkey bacon to the skillet and toss everything together. Taste and adjust seasoning with additional salt, pepper, or vinegar if needed.
  • Transfer the fried cabbage to a serving dish. Serve warm as a side dish or enjoy it on its own. Savor the smoky, savory, and slightly tangy flavors in every bite!
