Ingredients
  

  • 1 pie crust store-bought or homemade
  • 1 cup fresh asparagus chopped
  • 1 cup carrots diced
  • 1 cup frozen peas
  • 2 small Yukon Gold potatoes diced
  • 1 medium sweet onion chopped
  • 2 cloves garlic minced
  • 1 cup low-sodium vegetable broth
  • ½ cup heavy cream
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 425°F (220°C) and grease a pie dish.
  • In a skillet over medium heat, melt butter and sauté onion and garlic until fragrant.
  • Add asparagus, carrots, potatoes, peas, thyme, rosemary, broth, and cream; simmer for about 10 minutes.
  • Season with salt and pepper; pour filling into the pie crust.
  • Cover with top crust or lattice; seal edges.
  • Bake for 25-30 minutes until golden brown.
