Ingredients
  

  • 3 –4 ripe bananas mashed
  • 1 cup canned pumpkin puree
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ¾ cup packed brown sugar
  • 2 large eggs
  • ½ cup unsalted butter melted
  • 1 tsp vanilla extract
  • ½ cup chopped nuts walnuts or pecans – optional

Instructions
 

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • In a large bowl, mash the bananas until smooth.
  • Stir in pumpkin puree, melted butter, and eggs until well combined.
  • In another bowl, whisk together flour, baking soda, cinnamon, and salt.
  • Gradually fold dry ingredients into the wet mixture until just combined; avoid overmixing.
  • Gently fold in brown sugar and nuts (if using).
  • Pour the batter into the prepared loaf pan and bake for 60-70 minutes or until golden brown and a toothpick comes out clean.
  • Allow to cool before slicing.
