Instructions
Preheat the oven: Set your oven to 375°F (190°C). Grease a baking dish with olive oil and set aside.
Flatten the chicken: Place the chicken breasts between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to pound them to an even ½-inch thickness.
Season the chicken: Sprinkle both sides with salt and pepper to taste.
Prepare the filling: In a mixing bowl, combine chopped broccoli, shredded cheddar, cream cheese, minced garlic, thyme, paprika, and red pepper flakes. Stir until well mixed.
Stuff the chicken: Spoon the broccoli cheese mixture onto one side of each chicken breast. Carefully roll them up, enclosing the filling. Secure with toothpicks or cooking twine to keep everything in place.
Bake: Place the stuffed chicken seam-side down in the greased baking dish. Drizzle the tops with olive oil and sprinkle with extra salt and pepper if desired.
