Ingredients
  

  • boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • Olive oil (for drizzling)
  • broccoli florets, steamed and finely chopped
  •  shredded cheddar cheese
  • cream cheese, softened
  •  cloves garlic, minced
  • dried thyme
  • paprika
  •  red pepper flakes (optional)

Instructions
 

  • Preheat the oven: Set your oven to 375°F (190°C). Grease a baking dish with olive oil and set aside.
  •  Flatten the chicken: Place the chicken breasts between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to pound them to an even ½-inch thickness.
  •  Season the chicken: Sprinkle both sides with salt and pepper to taste.
  • Prepare the filling: In a mixing bowl, combine chopped broccoli, shredded cheddar, cream cheese, minced garlic, thyme, paprika, and red pepper flakes. Stir until well mixed.
  • Stuff the chicken: Spoon the broccoli cheese mixture onto one side of each chicken breast. Carefully roll them up, enclosing the filling. Secure with toothpicks or cooking twine to keep everything in place.
  • Bake: Place the stuffed chicken seam-side down in the greased baking dish. Drizzle the tops with olive oil and sprinkle with extra salt and pepper if desired.
  • Cook to perfection: Bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C)
  • Rest & Serve: Remove from the oven and let the chicken rest for a few minutes before slicing. Garnish with fresh herbs if desired.
