This crispy, cheesy Homemade Mexican Pizza is the ultimate fusion of tacos and pizza! Made with layers of crunchy tortillas, seasoned beef, creamy refried beans, tangy enchilada sauce, and gooey melted cheese, it’s an easy and delicious meal the whole family will love. Perfect for taco night, quick dinners, or anytime you’re craving bold Mexican flavors!

Ingredients
  

  • lean ground beef
  • medium flour tortillas
  • taco seasoning
  •  water
  • refried beans
  • enchilada sauce
  •  shredded cheddar cheese
  • pepper-jack cheese
  • Roma tomato, diced
  • green onion, diced
  • sliced black olives

Instructions
 

  • Preheat the OvenPreheat the oven to 375°F. Spray two baking sheets with non-stick spray and place 3 tortillas on each sheet.
  •  Crisp the TortillasBake the tortillas for 3–5 minutes, flip, and bake for another 2–5 minutes until golden and crispy. Set aside.
  •  Cook the BeefIn a skillet over medium-high heat, cook and crumble the ground beef until browned. Drain any excess grease.
  •  Season the MeatAdd the taco seasoning and water to the cooked beef. Bring to a boil, then reduce heat to medium-low and simmer for 10 minutes. Set aside.
  •  Assemble the PizzasWarm the refried beans in a microwave-safe bowl. Spread a thin layer on one crispy tortilla. Top with ⅓ of the seasoned meat, then place another tortilla on top.
  • Add Sauce & ToppingsSpread 3 tablespoons of enchilada sauce over the top tortilla. Sprinkle with cheddar and pepper-jack cheese, then add diced tomatoes, green onions, and sliced black olives.
  • Bake the PizzasRepeat the process with the remaining tortillas to create three pizzas. Place them back in the oven and bake for 5 minutes, or until the cheese is melted and bubbly.
  •  Serve & EnjoyLet the pizzas cool slightly before slicing into quarters. Serve immediately and enjoy the crispy, cheesy goodness!
