Ingredients
  

  • 1 can 15 oz chickpeas, drained and rinsed
  • 3 tablespoons mayonnaise or vegan mayo
  • 1 tablespoon Dijon mustard
  • 2 celery stalks diced
  • 1/4 cup red onion finely chopped
  • Juice of 1/2 lemon
  • Salt and pepper to taste

Instructions
 

  • In a mixing bowl, lightly mash the drained chickpeas with a fork or
  • potato masher.
  • Add the mayonnaise and Dijon mustard to the mashed chickpeas and mix until well combined.
  • Stir in the diced celery and chopped red onion until evenly distributed.
  • Squeeze the lemon juice over the mixture and season with salt and pepper to taste; mix well.
  • Chill in the refrigerator for at least 30 minutes before serving.
