Ingredients
  

  • orzo pasta
  • cherry tomatoes, halved
  • cucumber, diced
  •  red onion, thinly sliced
  •  Kalamata olives, pitted and sliced
  • crumbled feta cheese
  •  fresh parsley, chopped
  •  fresh basil, chopped
  • Salt and pepper to taste
  • extra virgin olive oil
  • lemon juice
  • red wine vinegar
  •  Dijon mustard
  • garlic powder
  • Salt and pepper to taste

Instructions
 

  • Cook the orzo pasta according to package directions. Rinse with cold water and drain.
  • Prepare the vegetables: halve cherry tomatoes, dice cucumber, thinly slice red onion, and slice Kalamata olives.
  • In a large mixing bowl, combine cooked orzo, vegetables, and feta cheese.
  • In a small bowl, whisk together the vinaigrette ingredients until smooth.
  • Pour the vinaigrette over the salad and toss gently.
  • Add parsley and basil, toss again, and chill for 30 minutes before serving.
