Ingredients
  

  • 1 pound large shrimp peeled and deveined
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 cup mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon honey
  • 1 celery stalk finely chopped
  • 1/4 red onion finely diced
  • 2 tablespoons fresh parsley chopped
  • 1 teaspoon fresh dill chopped
  • 1/2 teaspoon Old Bay seasoning
  • 1/4 cup Greek yogurt optional, for a lighter version

Instructions
 

  • Heat a skillet over medium heat and add olive oil.
  • Toss shrimp with salt, pepper, garlic powder, and paprika.
  • Sauté shrimp for 3-4 minutes per side until opaque and cooked through. Let cool.
  • In a large bowl, whisk together mayonnaise, Dijon mustard, lemon juice, lemon zest, honey, and Old Bay seasoning.
  • Chop the cooled shrimp into bite-sized pieces and add them to the bowl.
  • Stir in celery, red onion, parsley, and dill. Mix well.
  • Chill for at least 30 minutes before serving to allow flavors to meld.
  • Serve over greens, in a sandwich, or with crackers.
