Ingredients
  

  • box yellow cake mix
  • crushed pineapple (with juice)
  •  vegetable oil
  • large eggs
  • vanilla extract
  •  granulated sugar
  • unsalted butter
  •  crushed pineapple (from the can above)
  •  cream cheese, softened
  •  powdered sugar
  •  whipped topping
  • shredded coconut
  • chopped pecans

Instructions
 

  • Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • In a large bowl, combine cake mix, crushed pineapple (with juice), vegetable oil, eggs, and vanilla extract.
  • Stir until smooth and well combined.
  • Pour the batter into the prepared baking dish and bake for 30-35 minutes.
  • Check with a toothpick—if it comes out clean, it’s ready!
  • Let the cake cool completely before adding toppings.
  • In a saucepan over medium heat, melt butter and stir in granulated sugar.
  • Add half of the crushed pineapple and simmer for 2-3 minutes.
  • Let cool before spreading over the cake.
  • Beat cream cheese and powdered sugar until smooth.
  • Fold in whipped topping until light and fluffy.
  • Spread the pineapple layer evenly over the cooled cake.
  • Top with the cream cheese frosting and spread evenly.
  • Sprinkle with shredded coconut and pecans (if using).
  • Refrigerate for at least 1 hour before slicing.
  • Serve chilled and enjoy!
