1cupstone-ground grits
4cupswater or chicken broth
4tablespoonsunsalted butter
1/2cupheavy cream or whole milk
1cupsharp cheddar cheeseshredded
4slicesbacon or 8 ounces Andouille sausage
2green onionschopped
cayenne peppergarlic powder, salt, and pepper

Instructions
In a medium saucepan, bring water or broth to a boil. Gradually whisk in stone-ground grits. Reduce heat to low, cover, and simmer for 20-25 minutes until thickened.
In a skillet over medium heat, cook diced bacon or sausage until crispy. Remove but keep some fat in the pan.
Add peeled shrimp to the skillet with bacon fat. Season with salt, pepper, cayenne pepper, and garlic powder. Cook until shrimp are pink (about 3-5 minutes).
Stir in butter, cream (or milk), and cheddar cheese into the cooked grits until melted and creamy.
Return bacon/sausage to the skillet with shrimp and mix briefly to blend flavors.
