  • 3 –4 boneless skinless chicken breasts
  • 4 cloves fresh garlic
  • 1/2 cup oil-packed sun-dried tomatoes
  • 2 cups fresh baby spinach
  • 12 oz fettuccine or penne pasta
  • 8 oz cream cheese
  • 1/2 cup freshly grated Parmesan cheese
  • 1 cup low-sodium chicken broth
  • 1 tsp Italian seasoning

Instructions
 

  • Gather all ingredients; finely chop garlic and slice sun-dried tomatoes.
  • In a large skillet over medium heat, add olive oil. Season chicken with salt and pepper; cook for about 6 minutes per side until golden brown and cooked through.
  • Remove chicken from skillet; sauté minced garlic and sun-dried tomatoes for 2 minutes until fragrant.
  • Pour in chicken broth, scraping up browned bits from the pan. Gradually add cream cheese while stirring until melted and smooth.
  • Stir in fresh spinach and Italian seasoning until wilted; mix in grated Parmesan cheese.
  • Return cooked chicken to the skillet along with drained pasta; toss together until well combined.
