Experience the perfect blend of smoky BBQ chicken, sweet pineapple, and gooey cheese with this BBQ Chicken & Pineapple Grilled Cheese recipe. A tropical twist on classic comfort food!

Ingredients
  

  • boneless skinless chicken breasts
  •  sweet and spicy BBQ sauce, divided
  • slices thick-sliced bread, such as sourdough
  •  extra sharp cheddar cheese, grated on the largest setting
  •  thinly sliced pineapple strips (canned pineapple, sliced thinly, is also an option)
  • Butter, for spreading
  • Nonstick spray, for cooking

Instructions
 

  • Preheat the oven to 350 degrees F. Place the chicken breasts in an oven-safe baking dish.
  • Spread ½ cup of BBQ sauce over the chicken, ensuring it’s well coated. Bake for 20 minutes, or until the chicken is thoroughly cooked.
  • Remove from the oven, shred the chicken with two forks, then mix it with the remaining ½ cup of BBQ sauce in a large bowl until evenly coated.
  • Butter one side of each bread slice. Lay the slices out, butter side down.
  • On 4 slices, spread ¼ cup of cheese, followed by a quarter of the chicken mixture on each.
  • Add 3 pineapple slices on top of the chicken, then top with another ¼ cup of cheese.
  • Cover with the remaining bread slices, butter side out, and press down gently.
  • Heat a skillet or grill pan over medium heat and lightly spray with nonstick spray.
  • Cook the sandwiches (butter side down first) for 3-4 minutes until browned, then flip and cook for another 1-2 minutes. Watch closely to prevent burning.
  • Repeat with the remaining sandwiches. Serve immediately, cut in half.
