Ingredients
  

  • chive and onion cream cheese
  • Campbell’s condensed cream of bacon soup
  • shredded mozzarella cheese
  • real bacon bits
  • boneless, skinless chicken breasts
  • egg
  •  crushed Doritos

Instructions
 

  • Preheat the Oven: Set your oven to 375°F (190°C) to preheat.
  • Prepare the Filling: In a medium mixing bowl, add the chive and onion cream cheese and the cream of bacon soup. Blend these together with an electric mixer until the mixture is smooth.
  • Add Cheese and Bacon: Stir the shredded mozzarella cheese and bacon bits into the cream cheese mixture. Once combined, set this aside.
  • Prepare the Chicken: Take each chicken breast and make a horizontal cut to open them up like a book. This will create a pocket for the filling.
  • Stuff the Chicken: Spoon the prepared cream cheese mixture onto one half of each opened chicken breast. Then, fold the other half over the top to enclose the filling.
  • Prepare for Baking: Place the stuffed chicken breasts in a greased 9×13 inch baking dish.
  • Add the Egg Wash: In a small bowl, beat the egg thoroughly. Brush this beaten egg over the tops of the stuffed chicken breasts. This will help the Dorito crumbs adhere in the next step.
  • Add the Dorito Crust: Sprinkle the crushed Doritos over each chicken breast, pressing them gently into the egg wash to make sure they stick well.
  • Bake: Put the baking dish in the preheated oven and bake for 33 minutes, or until the chicken is thoroughly cooked.
  • Rest Before Serving: Once the chicken is done, let it rest for a few minutes before serving to allow the juices to redistribute.
