Ingredients
  

  • 1 cup pumpkin puree
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 8 oz cream cheese softened
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • Pinch of salt

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a bowl, mix softened cream cheese with sugar until smooth; set aside.
  • In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • In another bowl, combine pumpkin puree, sugar, eggs, and vegetable oil; whisk until smooth.
  • Pour the wet mixture into the dry ingredients and stir gently until just combined.
  • Fill each muffin cup halfway with batter, add a tablespoon of cream cheese mixture on top, then cover with more batter.
  • Bake for 20-25 minutes or until a toothpick inserted comes out clean.
