1 medium butternut squash
2 tablespoons olive oil
3–4 garlic cloves
1 cup low-sodium vegetable broth
1/2 cup heavy cream or coconut milk

Instructions
Preheat oven to 400°F (200°C). Halve the butternut squash lengthwise, scoop out seeds, drizzle with olive oil, and season with salt and pepper.
Place cut-side down on a baking sheet lined with parchment paper. Roast for 40-45 minutes until tender.
In a pan, heat olive oil over medium heat and sauté minced garlic until fragrant (about 1 minute).
Once the squash is cool, scoop out the flesh into a blender along with sautéed garlic, vegetable broth, cream (or coconut milk), and salt to taste.
