  • 8 oz fresh cremini or shiitake mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

  • Cook the pasta in salted boiling water until al dente; reserve 1 cup of pasta water before draining.
  • In a large skillet, heat olive oil over medium heat and sauté sliced mushrooms for about 5 minutes until golden brown.
  • Add minced garlic to the skillet and cook for an additional minute until fragrant.
  • Pour in heavy cream, simmer on low for 3 minutes, adjusting texture with reserved pasta water if necessary.
  • Toss the drained pasta into the sauce and combine well; cook on low heat for another 2 minutes.
